In fact, I know only one tool for editing epub. This free program called Sigil. At its core, it is a full-fledged text editor, the purpose of which is to edit epub.
Here you can copy/paste, numbering and sections. In a word - there is something to work with. I will not describe the functions in detail. Many users are already well versed in text editors. There is nothing complicated here either.
This is my selection. For regular e-book readers, this is more than enough. But you just need to remember that in order to fully display a book in Stanza, you need adequate quality of the input resource. That is, if there is a not very correctly scanned book, then you should not expect miracles from the epub. In any case, do not clutter your e-readers!

To summarize, we can say that for those who want to read their book on desktop computer, PDF format convenient and acceptable, but if you want to read in mobile device, EPUB recommended.
Converting a TXT file to EPUB is a process that changes the presentation of the data, not the data itself. Data conversion is a process performed for the needs computer technology.
